The batter is thin so as not to spoil the innate taste of the ingredients, and the owner-chef uses high-quality white sesame oil to give it a light texture and pleasant fragrance. He changes it frequently and pays close attention to its temperature. The focus is on first harvest vegetables as he wants diners to feel the arrival of the season. The seafood tempura that showcases the season, like blenny, young ayu, goby and fugu shirako, is also a treat.
