MICHELIN Guide’s Point Of View

‘Esquisse’ means ‘sketches’ – of the wealth of ideas and originality that the dishes reflect. Lionel Beccat has great respect for Japanese ingredients. He is constantly working Japanese and French seasonal elements in to express the diversity of those countries' terroir. The terrine de fromages is one characteristic item which amply features the ‘symbiosis’ principle of the chef. The light and delicate dishes are picture perfect.
