This was founded in 1954 when the original owner-chef went out on his own in his hometown after training in Kyobashi. The kitchen is now manned by his son and grandson. Toppings include white-fleshed fish flavoured with kombu, gizzard shad seasoned with vinegar and salt and soft, boiled anago. They’re paired with rice seasoned with akazu. The old Edomae techniques have been unbendingly passed down from generation to generation.
