5 Michelin-Listed Modern Cantonese Restaurants To Check Out In Guangzhou

With the recent launch of the Guangzhou-Shenzhen-Hong Kong Express Rail Link, dining at these innovative restaurants will be breezier.

Guangzhou is synonymous with Cantonese cuisine, from stalwart favourites such as roast suckling pig, sweet and sour pork to soy sauce chicken. However, the biggest city in China’s southern province Guangdong is embracing a wave of change as more restaurants offer contemporary twists to the time-honoured cuisine.

A good number of modern Cantonese restaurants are among the 63 establishments that have been recognised in the inaugural MICHELIN Guide Guangzhou, which was released in June. We round up what our inspectors think about five modern Cantonese restaurants in one of China’s culinary cities.

1. BingSheng Mansion

One Michelin Star

The main dining room and the 32 private rooms exude an understated glamour. Championing innovative and refined Cantonese fare, it serves hand-crafted dim sum at lunch, such as sachima with olive nuts which is rarely seen these days. Special char siu uses pork belly that is marinated overnight and grilled till crispy. Other must-try items include stir-fried flat rice noodles with sliced beef, signature pineapple buns and roasted juicy goose.

2. Jade River

One Michelin Star

Diners unwind here with a cup of tea freshly brewed by tea masters. The traditional garden, water features, exquisite wood work and artisan Manchurian windows give it a serene feel. The food is, of course, no less impressive. Steamed sunflower seed-fed chicken is delivered straight from the farm daily. Baked pigeon with lemongrass and salt is another proud creation of the chefs. Also try various poultry and meat in white marinade.

3. Jiang by Chef Fei

One Michelin Star

Its classic Cantonese fare prepared with a modern twist makes this restaurant one of the most popular among locals. Chef Fei bases his cooking on time-honoured traditions, but revolutionises them with touches of creativity. Try his versions of Peking duck and char siew pork — juicy meat enrobed in crispy skin and crust. Dim sum is nicely presented, especially the dessert that includes a deep-fried bird-shaped rice dumpling with coconut milk.

4. Sui Xuan

Brace yourself for the grandeur of this modern restaurant — the 8m-high ceiling and the sheer expanse of space is quite amazing. The menu is classic Cantonese, made with seasonal ingredients. Try Chef Deng's crispy chicken, roast baby pigeon, and boiled yellow croaker with prawn and ginger; they all hit the spot with their tantalising tastes and impeccable execution.

5. Summer Palace

The majestic red and gold colour scheme and opulent décor have become the unmistakable signature look of the restaurant in Shangri-La Hotel Guangzhou and its namesakes in this international hotel chain. Chef Chan reinvents Cantonese classics with a refined touch. Try his juicy and tender char siu pork, or his Peking duck with crispy skin in a glossy dark caramel colour. The views of the park are another highlight that adds to the dining experience.
