The chef learned traditional cooking techniques in France and about food diversity in Australia. He creates original dishes that retain their roots in French cuisine. Good examples of this are the open sandwich featuring salmon roe marinated in Alsatian white wine and the corn and raw uni tiramisu. He also offers curry and ramen made using fond out of a desire to make it a place for free and easy dining.
