Up a dusty road is this jungle resort where you'll discover an animal sanctuary, villas and treehouses, and this chic, open-air restaurant where fans swirl overhead and misters keep the abundant greenery at its peak. The casual, contemporary Mexican cooking is punched up with Asian influences, and the simple-but-stylish dishes are as gorgeous as the delightful setting. Guacamole is a perfect opener, with a bowl that's pitch-perfect in flavor but equally impressive with its looks (think flower petals as a flourish). Ceviche in a fresh, sweet mango sauce with leche de tigre is a riot of color before moving on to main dishes like grilled octopus, al Pastor suckling pig, and even ramen on certain days. To finish, their riff on key lime pie is just right.
"Our farm supplies the kitchen with over 60 organic products, and we collaborate with local producers who follow responsible and traceable practices for what we don't grow on-site. Our cocktail bar uses seasonal ingredients and zero-waste techniques. We have eliminated single-use plastics and implemented recycling, composting, regenerative agriculture, and honey from our own hives."
