The MICHELIN Guide Nordic Countries 2023 Is Out!

The selection includes 2 new Two Star, 14 new One Star, 7 new Bib Gourmand and 7 new Green Star restaurants

Today, we are delighted to unveil our new selection of restaurants in the MICHELIN Guide Nordic Countries 2023. The annual MICHELIN Guide Ceremony was held in Finland for the first time, in the country’s oldest city, Turku. Five countries make up the Nordic Countries selection: Denmark, Finland, Iceland, Norway and Sweden.

42 restaurants have been added to the 2023 edition of the Guide, which takes the total number of restaurants to 271. Of these, 81 have One, Two or Three MICHELIN Stars; 34 have a Bib Gourmand for their great quality, great value cooking; and 39 see their outstanding commitment to sustainability recognised with a MICHELIN Green Star.

AIRA – Stockholm, Sweden
Tommy Myllymäki's Two Star restaurant displays sophistication at every turn, in its delightful spot by the water. The truly beautiful dishes, whether quenelle with scallops or charcoal-grilled quail, are made up of memorable combinations and supreme ingredients.

Koan – Copenhagen, Denmark
At this charming restaurant, Korean-born chef-owner Kristian Baumann’s exquisite, creative dishes display subtle influences from his homeland and there is a purpose to every element on the plate. As such,  Koan goes straight into the Guide with Two MICHELIN Stars.

With these two new additions, the MICHELIN Guide Nordic Countries now recommends 14 Two Starred restaurants. At Three Star level, all 4 restaurants who previously held the award have maintained their status, highlighting the exceptionally high quality and consistency of their cooking.

This very elegant restaurant uses Norwegian produce to create sumptuous French dishes.

ARO – Odense, Denmark
A lack of signs may make it hard to find, but this likeable and unassuming restaurant is well worth seeking out.

Domæne – Herning, Denmark
Looking like a large wooden igloo, this restaurant adds creativity to its back-to-nature approach.

Grand Royal – Vejle, Denmark
The quality is still high at this new incarnation of Me|Mu, with a change in menu concept and a more casual look.

K2 – Stavanger, Norway
The focus is on prime produce from the local area at this charming and personally run restaurant.

Mon Oncle – Oslo, Norway
Classic Gallic cuisine is prepared with great care at this smart spot with an impressive wine list.

Moss – Grindavík, Iceland
The Blue Lagoon is one of Iceland’s biggest attractions and now it has a restaurant worthy of a visit in itself.

Sabi Omakase Oslo – Oslo, Norway
Sister to the original in Stavanger, the counter here seats just 12 and traditional sushi skills are on display.

SAVAGE – Oslo, Norway
Tucked away inside a hotel, the team here offer a menu blending flavours from around the world.

Signum – Mölnlycke, Sweden
Occupying a lovely spot on the shores of Landvettersjön lake, this restaurant delivers dishes full of depth and sophistication.

Stallen – Oslo, Norway
A surprise menu with produce from their garden is the appeal at this sweet spot in a former stable block.

Tri – Agger, Denmark
There’s a story behind each dish in this memorable wood and glass structure in a Danish coastal town.

VÅR – Porvoo, Finland
The chef’s close relationship with producers is evident in beautifully crafted dishes at this former chocolate factory.

Villa Vest – Lønstrup, Denmark
A visit to this restaurant promises striking views from its cliffside location alongside superlative dishes.

With these new additions, together with the restaurants retaining their awards, no less than 63 establishments are now recommended with One MICHELIN Star (21 in Denmark, 6 in Finland, 3 in Iceland, 18 in Norway and 15 in Sweden).

7 New MICHELIN Bib Gourmand Restaurants

In addition to new Stars, the MICHELIN Guide inspectors have recognised 7 restaurants with a Bib Gourmand for their good food at moderate prices. The new ‘Bibs’ are diverse in style, but are united by providing guests with great value for money. These new additions take the total number of Bib Gourmands in the Nordic Countries to 34. The new MICHELIN Bib Gourmands are:

Reflecting this, seven restaurants have been awarded a MICHELIN Green Star for their dedication to a more sustainable ethos, bringing the total number of MICHELIN Green Star restaurants in the Nordic countries to an impressive 39. The new MICHELIN Green Stars go to:

3 MICHELIN Special Awards

With its Special Awards, the MICHELIN Guide shines a light on talented professionals in Michelin-recommended restaurants who raise the gastronomic experience to a higher level. In doing so, they demonstrate how varied and exciting the hospitality industry is to work in.

MICHELIN Young Chef Award – Jalmari Kunnas, Demo (Helsinki, Finland)
Jalmari returned to this iconic restaurant in 2021, after a period spent broadening his horizons in other kitchens. He manages the kitchen at a relatively young age and also ensured the restaurant retained its MICHELIN Star in this year’s selection.

MICHELIN Welcome and Service Award – Mia Kondrup, À L'aise (Oslo, Norway)
It’s been a great year for À L'aise, gaining One MICHELIN Star and this Special Award for Mia and her team. The inspectors were particularly impressed with the passion of the service team, how they reflect Mia’s own enthusiasm and how everyone works so well together to enhance their diners’ experience.

MICHELIN Sommelier Award – Emma Ziemann

Emma’s easy-going manner puts every customer at ease and her wine pairings range from Jura wines to local apple ice wine. The pride she has in the impressive cellar – for which she took over responsibility just over a year ago – is clear to everyone.

The full MICHELIN Guide Nordic Countries 2023 selection will be available on the MICHELIN Guide website and on the MICHELIN Guide App, available for free on iOS and Android; where users can research restaurants via their locations, cuisine types or additional features.

The Nordic Countries restaurant selection is also joined by the MICHELIN Guide selection of hotels, which features the most unique and exciting places to stay in the Nordic Countries and throughout the world.
