Located in a neighbourhood of Antwerp where the worlds of fashion and entertainment converge, Blueness brings cosmopolitan allure to a stylish Renaissance edifice. Done out in natural materials, the interior has an international feel and the menu has a Far Eastern slant. The fusion of French and Asian culinary traditions, with Japanese overtones, speaks to the experience of visionary Sergio Herman and the sensibility of chef Jaclyn Kong. They weave together briny notes from Zeeland, bold sauces, subtle fermented flavours and a symphony of textures, in dishes such as their croustade filled with a refreshing hamachi tartare, cucumber, apple and pops of salty caviar.
