MICHELIN Guide’s Point Of View

Hideki Ishikawa’s cooking features touches of creativity and is definitely unique. For example, the awabi is steamed with rice in the summer. He combines the steamed awabi with liver sauce and uses Niigata glutinous rice out of love for his hometown. Cobblestones against the black wooden wall behind Zengokuji Temple creates a Kagurazaka-like atmosphere. The spirit of studying the old to make new discoveries creates such charm.
