Kenichi Onodera, a native of Iwate Prefecture, showcases the attractions of his birthplace by weaving beef into kaiseki. He favours wagyu beef fattened in Hiraizumi, which comes from his parents, who run a butcher shop. Hanasansho (pepper flower) and shabu-shabu are served in spring; sukiyaki with matsutake mushrooms in autumn. He shows his ingenuity with combinations like char-grilled tenderloin and uni.
