MICHELIN Guide’s Point Of View

As the name of the restaurant, which means ‘bonfire’, suggests, the counter seats surround a central charcoal grill. The speciality is chargrilled seasonal ingredients. Examples include buri and katsuo grilled over straw, chicken breast and porchetta grilled in chunks. Skewered ayu, and hairtail wrapped around a bamboo skewer, are cooked in a charcoal-filled oven. At the end of the meal there are simple pastas with carbonara or Bolognese sauce.

Initiatives
We work together with producers in Kurahashijima Island
Hiroshima to reduce food loss. We process the imperfect fish discarded in the process of making chirimenjako into powder. We then put it into the mix for fritters and the like.
