MICHELIN Guide’s Point Of View

The owner-chef brings in unpolished buckwheat from all over Japan and, once he determines it’s ready, mills it himself. The nihachi is the popular choice of hot soba; for chilled, we recommend the juwari. In spring, ‘Tai Soba’ is offered and features tai with wakame and bamboo shoots. In winter, there is ‘Kaki Soba’ and ‘Shirako Soba’. We also recommend seasonal sobas like ‘Shirauo Soba’, which is available when a shipment of ice fish comes in.
