MICHELIN Guide’s Point Of View

Using buckwheat mostly from Fukui, three kinds of soba are made: nihachi, juwari and arabiki (coarsely ground). For first-timers, we recommend the ‘Soba Zanmai Zaru’, which features a little of each. Each has different characteristics: the nihachi goes down smoothly, the juwari noodles are thin and the arabiki is full of flavour. The salty dipping sauce has robust umami and a mild saltiness to it.
