His love of Spain inspires owner-chef Eiichi Matsumoto to recreate a Spanish ambience in his restaurant. Explaining the sopa de ajo, a soup of garlic and dry-cured ham, he says he wants customers to get a hands-on feel for the culinary culture of Spain. Reflecting his travels in Barcelona and Basque country, the culinary influences come more from the north of the country. The unalloyed tradition of Spanish cooking done with Japanese ingredients best sums up the fare.
