Rodrigo de la Calle defines himself as a culinary ambassador for the plant kingdom, a valid claim given the efforts he has made to champion our natural surroundings and his role as one of the pioneers of “green haute cuisine”. In his restaurant, with its open-view kitchen behind the bar counter, guests can observe dishes being prepared in front of them and interact with the chef, while at the same time discovering his culinary philosophy in which vegetables are the essence of his cuisine. His delicious, elegantly prepared dishes showcase plenty of technique and can be savoured on a choice of tasting menus: Vegetalia (including vegan and vegetarian options); Vegetalia Experience (with wine pairing, cheeses, infusions etc); Gastrobotánica (featuring meat, fish and seafood options); and Gastrobotánica Experience (with more dishes and a wine-pairing option). The cooking here is 100% seasonal and it is unusual to find recipes that are repeated, however standout dishes include the steamed artichokes, the roasted onions, and the purple sweet potatoes that are baked in salt and flambéed in the dining room.
"We work with local producers and suppliers, taking full advantage of their organic and much more sustainable resources. We also produce fermented drinks from surplus and waste products, in so doing creating added gastronomic value with the aim of generating zero waste."
