As part of bringing unique experiences to their elite cardholders, Capital One co-hosted the second MICHELIN On the Road dinner at One MICHELIN Star Frasca Food and Wine in Boulder, Colorado helmed by chef Ian Palazzola. The partner for the dinner was Michael Tusk of Three MICHELIN Star and Green Star Quince who brought his unyielding commitment for seasonal produce to the occasion.
The meal was a masterful meeting of the minds though, where chefs Palazzola and Tusk showcased distinct ingredients with robust flavors. Think Broken Arrow Ranch antelope topped with a salsa di nocciola, Dungeness crab with a kani miso, and a decidedly indulgent porchetta followed by a Paine Farm squab. Each dish was as delicious as it was stunning, with the duo putting great emphasis on the presentation to illustrate the beauty and refinement of the ingredients.
As guests lingered over courses and conversation, the evening finished with a sweet and savory punctuation, a semifreddo featuring kumquat and pink peppercorns for a hint of bite and acid. And get ready for more exciting On the Road dinners ahead as the next stop is in Dallas, later this month.
