Congratulations to Christina Theofilos, chef-owner of Bib Gourmand Psomi in Tampa and MICHELIN Guide Florida 2023 Young Chef Award Winner presented in partnership with Rémy Martin! The name of Theofilos's spot literally translates to bread in Greek, and Psomi is all about breaking bread in a familial, convivial spot like home. Here, love and quality of ingredients is king. Below, Theofilos dives into her adventures in the culinary landscape and what's next for the young ingénue.
You were born and raised in Tampa. How would you describe Tampa’s food scene?
Diverse! So many cultures are shared and celebrated here.
What did you want to bring to it?
For me it was simple, quality ingredients, sharing my love for food, and creating an environment where someone can’t wait to come back.
How did you get into gastronomy?
I just love great food, it's been that way since day one. My appreciation for sourcing quality ingredients and refined simplicity is how I love to eat and cook.
You’ve said, “Psomi is my love story.” Can you elaborate on this?
Growing up, my mom always said, "food Is love". This menu, these offerings are inspired by mom and yiayia’s [grandmother's] kitchen. For me, to be able to reference those flavors and memories with everyone who comes in feels like love!
What is your favorite dish?
The keftedes bring me to a place I never want to leave. This is the one item on the menu that is a true family recipe without any alterations.
What are your siblings' favorite dishes?
This changes with each visit! My brother, Speros, will always order the Greek Dip for the table with at least two more entrees to follow. My sister, Katherine, loves her Farm on your Table with Favosalata. And Stephanie, lately, has been all about the octopus ceviche.
What is your goal with Psomi?
I am focused on sourcing the best and offering deliciousness, every single day. Consistency is everything to me. And always cooking with love.
Where do you see the future of gastronomy in Florida headed?
Florida’s culture is on the rise. We have an incredible state that promotes business, making for a perfect place for young and interesting talent to share their food. It's more and more inspiring.
What was it like bringing your level of cuisine and vision to Tampa?
I have a casual spot with quality ingredients, that’s it!
What is next for you and for Psomi?
For me, hopefully a cappuccino. For Psomi, hoping to have a market for everyone soon. You know, [to be] the stop after school pick-ups.
