Nobuhide Takagaki was a fisherman before he became a sushi chef and uses that experience daily to select seafood at Toyosu market. He is faithful to what his mentor taught him about giving a strong flavour to the nitsume and preparing toppings with plenty of vinegar. Rice vinegar and akazu are used for the rice depending on the topping. He also adds ingenious touches of his own while still following tradition.
