For starters, the location on a 45ha estate is terrific. The small Lammershof hotel houses this restaurant, which is open daily, with its cosy dining rooms – or Stuben. In an upmarket rustic-style interior, you can tuck into the bison burger, for instance, which is made with meat from the hotel's own bison farm. Tip: In summer, make the most of the wonderful terrace.
Gastronomie et durabilité
"Not only do I have the opportunity to draw on the wealth of resources that our own bison and deer represent, but sustainability is also practised here in many ways. We have our own wood chip system and a slop system for producing biogas. Much of the furniture is made by repurposing our own scrap wood."
