With its white walls and seafoam-green booths, this “diner” may look like the classic American translation, but is in fact a far cry from your tuna-melt standby. Instead, this kitchen ramps up known classics by riffing on tradition. Need proof? Look no further than the kale nachos. Likewise, meatloaf is elevated with a hint of spicy sriracha and an earthy morel mushroom gravy; while even an expert fishmonger wouldn’t recognize those fish sticks enhanced with saffron aïoli. Roasted cauliflower tossed in tahini with fried chickpeas for crunch and pickled red onions for acidity is yet another win and goes to show that creating new traditions here is just as vital as jazzing up the old ones.
