"We use the produce from our own regenerative farm year-round, utilizing overwintering and cellaring techniques. We restore ecological balance with native planting; and what we don't grow or produce, we use small scale farmers and producers from the area that share our low-intervention ethos. We use exclusively Canadian produce, including Canadian ethically harvested caviar. Our wine list features low-intervention winemakers."
