The trio who founded this lively bistro in the Faubourg Poissonnière are certainly not short on bonhomie! In this trendy interior (raw walls, marble-topped pedestal tables, glass-paned cellar), the chef has savvily set about creating tasty bistronomy fare without falling prey to faddish effects: vegan stuffed cabbage with oyster mushrooms, carrots and caramelised onions; braised ox cheek; apple and quince tarte Tatin...
