The refurbished dining room sports a plush, chic vibe, providing the perfect foil to sample menus devised by Thibault Sombardier and his executive chef. Examples of their crisp, delicate touch include scallops in hazelnut oil, lemon and champagne gelée, or calf’s sweetbread and mushroom pie with a parsley sabayon.
