MICHELIN Guide’s Point Of View

For years, New York has enjoyed Korean-American chef David Chang’s hip, singular take on Asian cuisine—and now LA gets a taste of what all the buzz is about. Sequestered inside a former warehouse on the industrial fringe of Chinatown, reservations can be a challenge to land online, but gamblers can test their luck by trying for one of the few counter seats on a walk-in basis. Is it worth the hype? You know it. Chinese bing bread, a pita-like offering, may be topped with spicy pulled lamb or smoked roe and egg. Then, vegetable-inspired market dishes like raw sugar snaps with horseradish share equal time with staples like Chang's legendary crispy pork belly, wrapped in tender leaves of Bibb lettuce along with green papaya salad and spicy homemade chili sauce.
