Recipe: Uncle Boons Coconut Ice Cream Sundae From Thai Diner

Celebrate Valentine's Day (or any day) at home with this sweet treat from NYC Bib Gourmand Thai Diner

From Ann Redding at cult favorite Thai Diner, a Bib Gourmand in NYC's Nolita neighborhood, comes this delicious and photogenic ice cream sundae. At the restaurant, this dish is served with unbelievably creamy house-made ice cream, but you can save yourself time by buying good quality coconut ice cream.

Palm Sugar Whipped Cream
1 cup heavy cream
1/3 cup palm sugar

Heat palm sugar in microwave to melt. Gently heat heavy cream on stove top to warm. Whisk in palm sugar and combine well. Turn off heat. Cool quickly. Whisk the cream in a Kitchen Aid (or by hand) and set aside until needed.

Candied Peanuts
1 cup sugar
1.5 cups water
1 cup peanuts
Neutral oil for frying

Bring the above three ingredients to a boil. Let simmer five minutes. Drain and immediately toss with more sugar to coat well. Remove excess sugar and drop in fryer until dark golden. Upon removal from fryer sprinkle with more sugar and salt to taste. Note: If you don't want to fry at home, you can find candied peanuts at many candy shops and Asian supermarkets. You can also easily omit the peanuts, and this sundae will still be delicious.

Toasted Coconut
Toast grated coconut at 350°F (180°C) until golden.

To Prepare
Put a scoop of coconut ice cream in dish. Top with palm sugar whipped cream. Sprinkle with peanuts and toasted coconut. Enjoy!
