A rich stew of superb langoustine claw meat, for example, is balanced by the fresh crunch and perfectly judged acidity of pickled carrot. While the dining area benefits from a softly lit intimacy, the open kitchen is brighter so that your eye is drawn to the supremely talented chefs.

"Our fish is wild, line caught, not red listed or by-catch. All meat is organic or wild, almost all other ingredients are organic and produced in Norway. We recycle our food waste into garum, vinegar powder, oil etc. or as compost. Our wines are sustainable too. Our roof garden is planted with bee-friendly flowers, our uniforms are made from organic cotton."
