Dark, intimate and moody, Cardinal makes for an atmospheric place to dine in the smart suburb of Stockbridge. The set menu – available in a choice of lengths – takes a modern, sometimes creative approach to Scottish produce from both land and sea. Preservation techniques play a key role in several of the dishes, whether it’s fermented plums to accompany the oysters or pickled walnuts to go with the chicken. An international wine list is on hand to accompany the cooking, with a leaning towards natural and low-intervention options.
