The expertise of chef Kasper Verlinden and maître d'/sommelier Remco van Antwerpen is palpable at Portfolio – a testament to their combined wealth of experience. Meticulously prepared and ambitious, their original creations live up to high expectations. Fish, seafood and Asian flavour nuances take centre stage in the set menu, which is expressive, technically sophisticated and captivating. For instance, the chef grills Arctic char on the binchotan and accompanies it with a beurre blanc enriched with yellow yuzukosho for bright, spicy notes, and trout roe marinated in sake. Exceptional natural wines and non-alcoholic pairings round off the experience.
