Koji Koizumi is au fait with the characteristics of the ingredients and his dishes are Japanese through and through, but with modern touches. He also uses Western ingredients to come up with new dishes. In the summer, caviar is paired with chilled corn agar jelly. The deep-fried ayu arranged as if diving headlong into the truffle sauce is a playful touch. The gelatine made from orange that accompanies the tsukuri is amber hued and embodies the uniqueness of this establishment.
