Charismatic chef Mélanie Zervos and her partner Mickaël Cappella welcome guests to this small village between Mirepoix and Pamiers. In her cooking, she revisits the local terroir, drawing on produce sourced from local farmers and a handful of others slightly further afield! Enjoy organic tomato gazpacho, Parmesan mousse and house-made pesto, or red mullet, bouillabaisse-style jus, tomato steak, summer vegetables and saffron aioli… in a rustic-chic interior or on the shaded terrace in fine weather.
