Ralph Hermans welcomes you to his eclectic restaurant on the eighth floor of the Dormio Resort hotel. The interior radiates a golden glow and affords magnificent views of Maastricht and its surroundings. Diners have the choice between à la carte options showcasing first-rate ingredients and an appealing set menu (vegan version available). The chef unites French technique with complex Asian flavours; think prawn seasoned with a koji and dill oil vinaigrette. He takes pride in the beautiful presentation of his dishes and also has an interesting wine list up his sleeve.
