Thomas is the host and sommelier, and his brother Matthias, the chef, showcases the skills his mother taught him, cooking up a bold take on authentic Italian cuisine. For instance, he spices up raw salmon with a zingy tomato broth and various beans that have been imbued with subtle bitterness. A wasabi granita provides an extra kick.
