Once you have located the slightly hidden entrance, you find yourself in a world of fermentation, pickling and preserving – countless jars of various vegetables, mushrooms and the like are everywhere you look. The restaurant is pleasingly pared back, and some tables afford an interesting view over the pass into the kitchen. They source all ingredients from the region and, wherever possible, process these themselves. You can clearly see their sustainability concept in action here. The menu is seasonal, and the friendly waitstaff are happy to advise you as you choose.
