If you’re keen to try a different type of dining experience, this restaurant will surprise you with its size and its choice of dining spaces (when you make your booking, you’ll need to choose either the restaurant itself, the sushi bar or the so-called “Zona Blanca”). The menu here features Japanese fusion cuisine that makes use of Spanish ingredients and showcases influences from different regions across Spain (particularly Madrid) and other countries (France, Italy etc). Umiko works with Japanese “koshihikari” rice that is flavoured with different vinegars. Its desserts always come as a surprise, reminding us of our childhood through reinterpreted takes on Spanish sweet delicacies such as “Pink Panther” and Phoskito (which they have renamed Phosmiko). Don’t miss the tuna belly nigiri with Wagyu fat or the “sam” of Iberian Señorío de Montanera pork ribs.
