The Pavillon de la Reine, a magnificent edifice on Place des Vosges, is named after Anne of Austria, Queen of France and wife of Louis XIII, who once lived here. The refurbished dining room sports a plush, chic vibe, providing the perfect foil to sample menus devised by Thibault Sombardier and his executive chef. Examples of their crisp, delicate touch include scallops in hazelnut oil, lemon and champagne gelée, or calf’s sweetbread and mushroom pie with a parsley sabayon. The courtyard patio is a haven of peace and quiet in the bustling capital.
