Burgundy ham terrine, gherkin and fresh herb condiment; Jorat veal belly, pistachios and green asparagus: the Burgundian chef and Meilleur Ouvrier de France definitely knows his stuff. This is a fine dining version of modern French cuisine that highlights local and fresh ingredients and showcases small-scale producers. He successfully pulls it off, and keeps it affordable. Fine selection of wines by the glass.
"In our restaurant, we go beyond using regional and seasonal ingredients, we recycle all our waste, and turn fruit and vegetable scraps into juices, powders, vinegar, broth and stock. We only work with seasonal produce, chosen for its optimal flavour and nutritional quality, a detail that is particularly important to us."
