Renaud Augier, winner of the Un des Meilleurs Ouvriers de France (MOF) award, breathes new life into classic dishes with modern sensibilities. Specialities with an especially solid reputation include young duck roast made with duck that carries a serial number, which was enjoyed by Emperor Showa, and Three Emperor’s style goose foie gras.
