In 2021, this restaurant moved to new, more comfortable and contemporary-style premises in a historic palazzo near Castello Svevo and Santa Maria Assunta cathedral, where a cellar, ground floor and panoramic terrace provide a choice of dining spaces. Quintessenza remains in the capable hands of the Di Gennaro family – four brothers (including head chef Stefano) passionate about the modern Puglian cuisine that takes centre stage here.
