Situated near the Mole building, this restaurant has a modern, minimalist-style dining room with soft lighting. Here, owner-chef Marcello Trentini serves a surprise tasting menu, as well as an à la carte option. His modern dishes include influences from Piedmont, Italy and further afield, with an equal balance of meat and fish options. Our inspector recommends the spaghettone with butter, anchovies and eel, served with caviar for enhanced flavour, and perhaps accompanied by a fresh and lightly fermented Falanghina Cacciagalli wine.
