Mathijs Jacobs is a truly ambitious chef. If he’s brought a deer by a local huntsman or freshly harvested vegetables by a local farmer, his eyes light up. Whether he decides to cook his ingredients in a salt crust, grill them on the barbecue or use them in an ice-cream, he never lacks in inspiration and the result is always delicious!
