The Sicilian chef builds a menu of tasty and well-crafted Italian recipes that focus on the ingredients, for instance, carpaccio of meagre, puntarelle, Sicilian citron and buckwheat, or ravioli filled with Castelmagno cheese and potatoes, artichokes and aged parmesan.
