So young and already so talented! This couple have a background in literature and ecology, and their CVs feature Michelin-starred restaurants in Alsace. They cook as much with their heads as with their hearts and the Scandi-inspired decor hints at their philosophy: creativity, extractions, fermentations, plants to the fore, a concern for animal welfare, a natural wine list and haikus instead of the titles of dishes... Technique is solid too, with precise cooking times, deeply-flavoured sauces and jus, and bold combinations that work well. Online bookings only.
