A Nordic enclave at the Ritz Carlton in Geneva, Fiskebar has made a name for itself thanks to its delightful fish- and seafood-based cuisine. The finest ingredients are sourced via short supply chains and skilfully prepared by an expert kitchen team. Diners are treated to fresh and healthy Scandinavian cuisine, enhanced with subtle Mediterranean touches – smoking and fermentation techniques are also put to good use. In a setting that tastefully combines rustic materials with more modern touches, diners take their seats at tables that look onto the open kitchen or afford a view of the lake. On top of that, the wine list abounds with pleasing discoveries, including a range of biodynamic wines.
