Just across from Arnhem's main train station, Locals is a restaurant with a cosmopolitan atmosphere to be found in Hotel Haarhuis. The name says it all: ingredients are sourced as locally as possible, according to the principles of Dutch Cuisine. The abundance of plants and warm colours reflects that philosophy. Upstairs, there is even a vertical farm. Plant-based options include a delicate tartare of red carrot. Fish and meat, mostly of Dutch origin, are also on the menu, served alongside well-thought-out vegetable accompaniments.
