Taking its name from the Basque word for 'earth', this welcoming restaurant boasts a contemporary decor that includes earthenware jars adorned with large tree-like olive branches. The young chef in charge here, Lucía Gutiérrez, is keen to bring the land and its soil to life, hence her single 8-course menu (appetiser, 5 savoury courses, pre-dessert and dessert) that changes every three months, always based on local produce and with many nods to the plant world. They are always looking to support small producers wherever they can!
