The Sandoval brothers (with Mario in the kitchen, Diego at the head of the dining room and Rafael as sommelier) are, without a doubt, three great aces of Spanish hospitality. The magnificent restaurant, which covers an area of 1,100 m², elevates the experience by being laid out in stages that allow you to multiply the sensations, with stops at its colourful English-style bar, in the small room dedicated to The Macallan whiskies, in the spectacular wine cellar (it even has a 'sacristy' where sherry is poured with a venencia) and, before moving on to the dining room, a final aperitif in the kitchen. Always striving for deeper knowledge of seasonal raw ingredients, Mario Sandoval, through his "Madrid" menu (there is a vegan-vegetarian option) offers us a creative review of the cuisine of the capital but also, as they themselves say, of all that it can become. "We support the circular economy, reduce waste and promote research and awareness. The majority of our products are locally sourced and we have our own farm (El Jaral de la Mira) in the mountains with a vegetable plot where we reintroduce crops that have become obsolete."
