Intelligently devised and flawlessly crafted, the lunch and dinner surprise menus are a masterclass of hunger obliterating perfection, illustrated by grilled white and green asparagus, served with a delicate citrus-flavoured cream further enhanced by egg yolk, confit of black garlic and puffed buckwheat.
