MICHELIN Guide Inspectors Favourite Desserts in Dubai

Discover the list of sweet treats that MICHELIN Guide inspectors loved in Dubai.

With the announcement of the MICHELIN Guide Dubai 2024 that took place on July 4 2024, the latest selection boasts 35 different cuisine types and 106 restaurants that impressed our inspectors.

Of course, during their visits across Dubai’s most exceptional restaurants, MICHELIN Guide Inspectors experienced many memorable meals. A variety of dishes stood out, including noteworthy desserts that certainly satisfied their sweet cravings and no gastronomic experience is complete without a sweet ending!

In this article, inspectors narrowed down some of their favourite desserts during their exploration throughout Dubai’s dynamic culinary scene.

Vanilla and white chocolate cake

Inspector's notes: The desserts are all pastries made in-house the waitress proudly acclaimed. I found it hard to choose from the selection of nine in the glass fronted fridge, they simply looked amazing in all their glistening glory. Clearly, they are freshly made daily and simply looked fantastic. Such a dilemma to decide which one to choose - I opted for the vanilla and white chocolate cake, it looked quite beautiful and tasted as good as it looked - with a glossy, shining exterior of a smooth delicious white chocolate cream, decorated with fine white wafer-thin chocolate shards and inside a thick layer of smooth, creamy vanilla cream which was laden with vanilla seeds. The temperature was just right, layers of sponge were interspersed with further vanilla cream and there was a light crunch coming through from a little well-judged praline. A small piece of gold leaf was the crowning glory and added a luxury edge and a hint of sophistication! Simply a triumph, and the work of a very skilled pastry chef.

Inspector's notes: Slightly sunken in the middle, it was deeply golden. It's similar in style to a fondant, then as you cut it open the yellow-white chocolate and egg yolk sauce ran out beautifully. The flavour was creamy and satisfying, lightly warm, rich and unctuous. The silky-smooth creamy Tom Kha ice cream was a lovely contrast and sat upon a crisp golden coconut crumble.

Burnt pumpkin puree and mandarin sorbet

Smoked Room

Inspector's notes: Fire and the grill are central to the Smoked Room restaurant, and this also extends to the desserts. In this preparation, a velvety pumpkin cream was prepared with a light smoke accent, which really made a difference. Caramelized pumpkin seeds were slightly sweet and had a nice crunch. The beautiful arrangement of the kernels along the puree also offered something to the eye.

A perfectly twisted mandarin sorbet in turn added sophistication to the dessert, which was finished with some pumpkin oil. Once again proof that less is sometimes more.

Inspector's notes: I identify the tarte tropezienne with the south of France, and even more so with the restaurant in Saint-Tropez where I have had dozens of these tarts in the past. This version was slightly different, with a puff pastry shape that was well buttered and finely flaked (normally brioche dough is used). The filling of crème suisse with orange blossom was well flavored and topped with pieces of fresh strawberries. This was topped with a fine sugar crisp, a few strawberry segments and pieces of meringue. A strawberry coulis finished it all off. Now that's what they call meticulous pastry.

Inspector's notes: It simply looked stunning, so glossy and shiny, such refined simplicity... the exterior looked like molten chocolate and tasted beautifully rich, ultra-refined. It was topped with a little 24-carat gold leaf to add a sense of luxury and sophistication. Texturally it was close to perfect, and inside layers of rich sponge, silky smooth intense vanilla cream and rich chocolate ganache combined in an array of flavours and textures. At the base a layer of lightly crisp macadamia nut was a super effective contrast. A great finish to a memorable dinner.

Inspector's notes: This was neatly plated and showed a great deal of effort. A finger of uber-fruity mango mousse with a topping of mango gel, it had a clear flavour. Neat cream, caramel and gold leaf to garnish with a quenelle of soft ice cream that tasted of coconut. The flaked almond base was also a nice touch.

Inspector's notes: This not only looked good but delivered on the depth front; I suppose it resembled a cloud, the base light bright meringue, the top, bright white whipped Chantilly cream, in between the two, an intense cherry jam and a little lightly iced cherry sorbet. A nice blend of flavours and textures combined with good execution.
