The stripped-back interior weaves a rustic spell, while the menu shines the spotlight on the rich produce of Zeeland. "We mostly harvest the ingredients from our immediate surroundings ourselves. Fermentation, drying and smoking are all done in-house and we work closely with local organic farmers and fishermen. We try to keep waste to a minimum. Anything that is left over is collected separately and processed into biomass. We also have plans to start a food forest."
