Fresh green buckwheat berries are used to highlight the true flavour of the ingredient. That sentiment is also evident in the sobagaki. Envisioning an artisan from the Edo period crafting soba for today, he makes juwari soba while aiming for the feel of nihachi as it’s swallowed, combining buckwheat flours made using different milling methods. The rare menu features old seasonings like irizake and simmered miso dipping sauce.
